We love having a healthy and energising snack when we are on the go.
This is a simple snack or breakfast to give energy and good vibes and perfect to take on roadtrips. It only takes 2 minutes to prepare and 2 hours to set in the fridge. Make it in a clear jar to enjoy the matcha green color.
Chia has lots of fiber, protein and fats and the matcha is full of antioxidants.
CHIA MATCHA PUDDING
2 teaspoons matcha green tea powder (we love the one from Tefélagið)
1 cup non-dairy milk
¼ cup chia seeds
½ tablespoon pure date syrup
Toppings: Raspberries and almonds
serves 2
Instructions: In a large bowl, mix the matcha green tea powder with the milk and whisk until smooth and not clumped. Add the chia seeds and the maple syrup. Stir to combine, making sure there are no clumps of chia seeds. Place it the fridge for 2 hours or overnight to set. Top with fresh fruit, granola and/or nuts.
